oh - how about something about the tribbles? i know they 'officially' met them the 1st time on TOS - but there could be some chance encounter on Enterprise --
(forgive me for not being able to actually come up w/ a title)

I like 'The Archer Maneuver ', and 'Where Vulcans Have Gone Before'. I'd like to see an episode completely devoted to Porthos entitled, 'Can't Teach an Old Dog New Tricks'. Perhaps he can be stranded in Archer's ready room with T'Pol and he must force her to her outlook on humanity.
