Which is the definitive Star Trek?

Well, I never voted.

Definitive - The Original
Best - TNG
Worst - DS9
 
All good things branch from Kirk, Spock and McCoy. Generally maintaining continuity of series, the Original Series set the standard that the other grew from. I thoroughly enjoyed all the series and have always subscribed to the theorem " Star Trek is like pizza, when it's good, it's really good. When it's bad, it's still pretty good."

Rather a tough question to answer as "definitive" to me implies the work that best achieved what were commonly seen to be the stated goals of Star Trek rather than merely the "best". If you consider those goals to be sci fi based on a utopian society then I'd say TNG as with the increased budget and more liberial climate in was produced in helped overcome some of the original series weaknesses. If on the other hand you consider social commentary to be the franchises main aim then I'd say the Original series, DS9 and some of the films(Khan, Spock, Voyage, Undiscovered Country) to be better examples as they delt with the more current issues.

One quote interested me....

Deep Space Nine suffered from the characters being too "ordinary". I don't want my Star Trek characters to have the same failings as the people I meet every day.

I'v never quite understood why DS9 got this criticism but the Trek films did not as many of them also moved far away from the concept of a Utopian society and morally perfect characters.
