In another post, rdenning, a writer and self-publisher himself, pointed me in the direction of the copy-editor that does his work.
So this got me thinking: I'm sure other people want to find good copy-editing services. Here is a short list of what I found:

Professional Editing Services, Proofreading Services, and Writing Services Online. <--Little pricier. In the $2000+ range
Professional Editing Services, Fiction & Nonfiction Book Editing and Design & Publishing Support <--Prices aren't listed. You have to send for a quote, but it's a good resource home for copy-editing services and other services you may need for your book/eBook.
