Male protagonist access an parallel world via touching rings to "sea silver" lined doorways. I remember three books in the series. I remember he fought an immortal elf, kept his head and sword.
 
The Varayan Memoir Series by Rick Shelley?

Gil lives in current times but his legacy is as a noble of a parallel world governed by magic. He is both an Elfslayer and a Dragonslayer. Chaos in one world leads to chaos in the other as the worlds are interdependent. I think silver lined doorways are used.
