late 70s early 80s novel. Man and Centaur search post genetic apocalypse earth. Meet many strange mythic creatures, including vampires, hobbits, humanoid robots, fire breathing dragons, intelligent bear.

Cover of paperback was yellow with silhouettes of human, centaur, and many other mythic creatures.

How about "World enough and time" by James Kahn? (there's "Time's dark laughter" in the same series.

It's a long time since I read it, but the description fits what I remember.
 
Could it be Ariel by Stephen R. Boyett? After the collapse magical creatures make a comeback. It has Centaurs and other magical creatures. Written in 1983

He wrote a sequel, Elegy Beach, in 2009 which is rather good.
 
i think crispy's got it in one. i had that book, james kahn's world enough and time. about how reading was made into a forbidden religion and the protagonists, joshua the bard and his centaur friend were out hunting when their families were enslaved by vampires. they meet various people on their journey including a sentient cat, a female android and a really big butterfly.

its the first book in a trilogy, the other two were "Time's Dark Laughter" for the second in the new world trilogy, and " Timefall" the third, which is harder to find as it was published through St. Martin's Press, whereas the first two were published by DelRay. here is the open library link to where you can get the purchase links to it or find a place near you that has it.
