Some of those are pretty good.
Are the "people" in Star Wars Humans? I've never heard them described as such. They just happen to look like us. I've always assumed that they looked liked that because it made the casting easier as only humans were available on Earth...
And [maybe Avatar aside] the film-going audience wouldn't accept a fully non-human-looking cast. Along the lines that it is said they don't do subtitles either...

Yes, the casting company tried to audition in a galaxy far, far away but they found that arranging travel and accommodation was too demanding.
