(Found) Mini-blob

c1960 short story.
A (car sized?) black blob has been cast ashore from the sea by a storm. "Forever hungry" it is immortal...as long as the seas were there it has hunted, but can survive without food. It is photophobic, however, hiding during the day and eating people at night. It is finally destroyed by a police flamethrower...it was afraid of light because it instinctively sensed that fire was the one thing that could destroy it.

The ending:-

When the soldier finally shut off the flamethrower, there was nothing in sight except the white-hot glowing wires of the barrier and a big patch of blackened sand.

With good reason the mantle of slime had hated light, for its ultimate source was fire–the final unknown enemy which even the black hood could not drag down and devour.
 
TV Tropes includes a "Literature" section in its list of examples, and it has a page on Blobs.

They do include Brennan's "Slime", Ellison's "I Have No Mouth..." and Ian McDonald's Chaga series in it.
