This story revolves around three warriors, a monk, nun and cultist, who are the offspring of a witch and demon lord from hell. Each sibling was separated at birth and sent to different locations, the nun to a church and the cultist raised in a cult. The warrior monk is the MC of this story and left at a sacred temple around the Himalayas.

The warrior monk's temple gets raided one day by monsters and his demonic side awakens, killing everyone, including his training brothers, the monsters and even his father figure master. He then runs off into hiding, until one day he hears of this death battle tournament being run by the demon lord to gather the finest fighters snd even monsters to join. The MC warrior monk joins this tournament.

Another story is about an MC, who was adopted by a good family. who becomes like this superhero esque. Then few years later his adoptive family is murdered at age fifteen. He is then discovered by his biological evil grandfather who takes the young MC in and trains him, only for the grandfather to eventually betray him. The MC's grandfather is an enhanced half-demon that served in the military. The MC also finds out about his biological parents, who his father is also an evil demon/human hybrid and his mother is an angel. Both the grandfather and father are after the MC, who is also wanted by authorities for all his powers he contains woth being a demon/angel/human hybrid.

This MC grew up with his parents, who wee both part of these two powerful cults. One day the father discovers his son at age six or twelve and the mother are demons. He attempts to kill them both but the MC survives. Then one day, the father sets up a death battle royale tournament to lure as many supernaturals, monsters and anyone to join for a huge prize, so he can obtain these powers for himself and create his ultimate experiments. At this point the supernatural is not known publicly to the world but he wants to obtain it to use for himself. He discovers a respected competiton event, which he quickly takes over, turning it into a fight to death arena on his secret island.

The evil father also gets approached by a large brute man from another cult with a barbarian/gladiator-like physique, claiming to be his son from another woman he knocked up years ago and he accepts him as his right hand man. They both continue to steal the souls of many fighters,, which increased their powers. Eventually they resort to the island and the father holds the battle royale tournament. Meanwhile the MC son comes out of hiding and enters his evil father's death competiton to face him and his half-brother.

How can I combine all these MC's and stories into one? Or are they better on their own?

I don't have any suggestions except that you should first write the story that calls to you the most.

Though I'm not an experienced story teller, my experience has been that outlines are like plans for a battle (Helmuth von Moltke the Elder - Wikiquote). So, the outline got me writing, but pretty soon the story began to evolve. My use for outlines has been to keep track of ideas and also to see, at a very high level, if things are going to converge reasonably.

I see three outlines here. Not stories. If it were me, I would start writing. It is possible you will have very different questions after that.

When you play through these scenarios in your head, do the MCs all seem like the same guy? Or do they each have their own distinct personalities, traits, flaws?

It seems like some diagramming might help.
There is an old technique, common during the last millennia, where a writer would write quotes, scenes, relationships on 3x5 cards. You might have to google that. They may still be available.
You can then take those cards and spread them across a large table or pin them on a wall, reorganize them, add to them and take away from them. Perhaps make them look like a movie conspiracy investigation scene.

Choose the key elements from the stories that you really like and organize into a coherent whole.
Good Luck

I can see the similarities between these characters; there just seem to be slight variations in the backstories. What I feel I am missing though, is any sort of personality or reason to care about the character. Is the main character supposed to be someone the reader will like? Dislike? Is the character struggling against his or her darker nature or is the character drawn to it? What is the character's key internal conflict which he or she needs to overcome?

Make the character interesting to the reader and any of the possible backstories or combination of them would work.

I just spat out my prune juice.

Yeah, they still make 3x5 cards. I know because I use them all the time to plot out my stories. They're one of the main reasons I'm chronically "outtainc"
