Organising a booklet.

Need advice. My writers group have decided to put together an anthology of 24 short stories A5 size, using folded A4 stapled.
Easy, or so I thought. However cordinating the pages for folded double sided printing is turning out to be brain damage.
Does anyone know a bit of software or handy tip for setting it up?
Maybe there is a facility in word (2002) or open office current. I thought I 'd ask first, what people have found best?

Thanks @Finch Lots of useful info there. I will study it in detail later.

I found that I can do the 4 page per sheet duplex sorting in word 2003 and have now produced a 64 page draft copy.
This guy explained how.
