Mat Cauthon is the only character who, over the course of 13 books, has not managed to get on my last nerve at some point. I've come to be annoyed with (Rand, Perrin, Nynaeve), dislike (Lan, Min, Elayne, Thom), or downright loathe (Egwene, Egwene, Egwene) just about every character in this series. Mat has not only stayed true to character through some pretty dramatic circumstances but he's by far the only character to function with a realistic sense of self and duty.
