Finishing your plot

For instance, I added a character into one of my first chapters as a bit of comic relief, intending it just to be a one-off, never-see-him-again part. I ended up liking him so much that he became one of my POV characters and is now integral to both my narrative and the overall themes of the book.

I had this happen to me a few chapters ago - he was meant to be in only one or two scenes, but now he's a sounding board/sort of mentor for one of my POV characters and I really enjoy writing him. Also happens in reverse with characters you intend to be important and find that they don't quite fit with the plot any more. Go with the flow!
 
I created a character for no other reason than to annoy her older, by-the-book sister. Rebellious younger sister has now taken over as MC for a whole book. Maybe more.
 
That is possibly the greatest reason to create a character EVER,just to piss another one off...
