Stannis **spoilers**

I think the others use the wights as vampires would use familiars ie- to do tasks they were unable or were too risky to do. The others have a tremendous flaw in dragonglass, to the point that a boy like Sam slayed one of them, hence the others use wights, which do not suffer that defect, but are much slower and dim witted in a zombie kind of way. The wights are the others foot soldiers, cannon wall fodder, etc.

In regards to Stannis, as mentioned before, he is talked about as being made of iron but brittle. I do not think he will reach the end of the story.
 
I always just figured that the Others used the wights to increase their numbers. I mean, how cool is it that you can kill an enemy and then turn him against his brothers? For every person they lose, you gain one. That's a serious tactical move right there.
