Over the story, we have been shown a great many deal of knights, but only some are true knights. Varys, Tyrion, and Wyman Manderly all reference two of such knights each, but they all share one example in common. Who might it be?
 
Not Davos. I should point out that while the character may have been referenced many times and his deeds praised to the sky, he may not have actually shown up in the plot.

Okay Anushka my answer is surely wrong but there is definitely an Arthur Dayne in this story!!! Friend of Rhaegar Targaryen, brother of Ashara Dayne (one of those rumored to be the mother of Jon). He knighted Jaime Lannister and was killed protecting Lyanna Stark at the Tower of Joy.

P.S. My second guess is Aemon Targaryen (Dragonknight)
 
Really didn't want to answer for fear of making up a question, but it's obviously Rhaegar. One of the Freys is his namesake.

Nobody was named after that Arthur that we saw in the story yet. That is why I said that I remember no Arthurs in the current story.

Your second guess is correct.

Tyrion quotes him to Cersei comparing Barristan to him, Wyman mentions him to Davos, and Varys mentions him to Ned commenting how poor the Kingsguard is nowadays.

"The smallfolk talk of him (Barristan) the same way they talk of Serwyn of the Mirror shield and Prince Aemon the Dragonknight."

"Not every man has it in him to be Prince Aemon the Dragonknight or Symeon Star-Eyes..."

"The days when men like Ryam Redwyne and Prince Aemon the Dragonknight wore the white cloak are gone to dust and song."

Obviously, master Aemon was named after him.
